I'm attaching a recipe I use every few weeks '"Banana Blueberry Muffins". It's my 'tried and true' go to for muffins. I've substituted chocolate chips for blueberries (for my granddaughter when she went through her "I don't like fruit" phase 🤪). Today I added 2 tbsp's of ground flaxseed to the batter. It was based on a suggestion on using more fibre from @LeslieA. I just tried one of my muffins warm from the oven and they tasted good!!
As an aside, we always have two or three bunches of bananas in our house. My hubby bakes too. When they start to get brown is when they are best for baking. We also freeze them in pieces and you can defrost and use them for this recipe as well. Just add a bit more oats or flour as they bananas will have a bit more liquid to them. As for blueberries, I will freeze those as well if I find I have too many. I love that you don't need to defrost them. They can go frozen into the batter.
